In India, I had never seen putting egg inside the paratha after paratha is half cooked. Every filing in paratha or samosa or whatever always goes before cooking. I am really looking for a video to cook authentic indian way of cooking filled paratha. maybe next time when I visit india capture paratha cooking and post in youtube. paratha shouldn't be crispy

instead of triangle, heat the round parata one side and turn it and then pour the egg mixture on half the parata and close it with the other half and let it cook the same way.
actually in bengal, parathas are never known to be anything but triangular. when i stepped out of bengal for the first time, and saw the circular parathas, i was surprised.

Definitely...as long as the egg is there, any ingredient will work. If it's meat, then cold cuts work great.
