It's probably been done a thousand times already, so I don't see the necessity. You can however visit the site mmowned(dot)com. This site is all about model changes and you'll find many guides telling you exactly how to do it properly.

Unitframes: Pitbull, Raidframes: Grid, Action bars: Bartender4. That's the basics. I'm not using this interface anymore So I can't remember all of 'em. If you want to know about a specific addon, just ask. I might remember it.

I changed the model from draenei female to bloodelf female by using an MPQ file :)

It is permanent, yes. Yes, it is against blizzard's rules but so far I haven't heard of anyone getting banned for changing the model of his character. If you change other things, however, like creating an underground path to Baron Rivendare in Stratholme, you'll get banned because you get yourself an ingame advantage. By changing your character's looks, you don't gain any advantage at all whatsoever, it's just... fun :)

It is still risky, though.

a question about rsto shammys: Is it just chain heal spam?

Not anymore, in TBC (especially Sunwell) they spammed chain heal. But between the changes to the priest/druid 51 point talents, as well as the change to Prayer of Healing, shammys don't have the best AoE healing anymore.

That's the normal Recount addon. didn't modify much. As for the TPS addon (Threat per second?) - I don't have one.

Pitbull (unitframes), Bartender4 + Buttonfacade (Actionbars), Quartz (Cast bar), HotCandy (HoT Timers), kg_panels (adds black boxes), Ghost Pulse (Shows spells once they're ready), PowerAuras (Shows trinkets procs + more stuff) and Grid for Raid frames
