Thank you for the cooking lesson, I love coconut rice. But please don't use any type of plastic as it's chemically processed which the food absorbs. Foil is a better option but not the best either. I found that using a rice cooker is a good option, but adds more steps to the final result.

@iroc31407 It appears that she used 3 roasted red peppers. You can usually find them in a jar and they appear flat due to already being cooked. 3/4 of an onion is 3/4 of ONE onion, but of coarse onion sizes vary.

The BEST coconut rice is the EFIK recipe! We don't use tomatoes,nor curry,nor thyme, but we use dried cray fish,(not the CUBED VARIETY!), smoked, as well as fresh fish! It's authentic,traditional, and......DELICIOUS!!!!
