It works on the same basis as when you tell your bird to step up or dog to sit. When a bird steps onto your finger you say step up and reward with a treat. To get Maggie to put her wings up I moved my hand down - resulting with her putting her wings out for balance, hence big eagle. Immediately reward with a treat. Continue to repeat this and your bird will know what to do to earn the treat, in Maggie's case walnuts.
