Because it is good. I'm tried of seeing so called "covers" where the person improvs the difficult parts because they don't have the ear to figure out the correct notes or the skill to pull off what the artist played. I'm not saying I expect people to play every solo correctly note for note, but I hate waiting to hear how well they're gonna pull it off only to listen to some improv that usually is greatly inferior to the real song.
