Well, first of all this guy is NOT representative of the gentleman cowboy of Texas. I attended Texas A&M University and the standard greeting for all peoples you encounter was "Howdy." As to where to take off your hat, NEVER, NEVER, NEVER wear your hat at anyone's table whether at a person's home or in a restaurant. To temporarily remove your hat when you first meet a lady is a sign of good breeding and respect, Once done, put it back on unless you are trying to make a really solid impression

Never sit a the family's dinner table wearing any type of hat.Understand that a hat is an outdoor accessory and should be treated as such. All commercial buildings are exempt from this courtesy with the exception of restaurants. A real gentleman never eats with his hat on unless he is dinning in the outdoors.
I don't know how they do things where he is from but in Texas we say howdy and remove our hats for those lovely southern women!
