I've never made homemade bread with the sponge method like this but it seems easier than the old way of kneading forever =) Also, very healthy the way you use home ground wheat and whole wheat bread. Ever think of adding a little honey to it for a sweeter tasting bread?

hmmm, my reply didn't go through. Anyway Blend-Tec now owns the design on the mill that Nancy is using. I use a Wondermill that is less noisy. I'm sure if you keep your eye out at yard sales and thrift stores you could find one cheap. Someone I know found her mill at a yard sale for $5! Same exact thing as Nancy's. I wish I was that lucky. LOL!
I love this and can't wait to see the end result! I am baking bread this morning (Thanksgiving here in the States), but I'm using my breadmakers. I have 2 going right now. As soon as they finish, I have to make 2 more loaves! Taking it to my sister's house today for dinner. MmMmMm! I love that yours is made FROM SCRATCH, even the wheat!
hi dena, read your post. i use my bread machine on the dough cycle and then finish by hand. try it, you will like it better than the whole thing in the machine.

@Amandandoug Sometimes I add molasses or honey, oil, eggs, salt, raisins, etc. This is just my most basic, cheapest bread!
