The story of wing chun teaches us that soft overcomes hard. The story of Chang San Feng viewing the battle between a snake and a crane teaches us that grace and suppleness is how we avoid injury. First one,Zhang San Feng,a great Student of Shaolin,graduated,went back to the original Taoist ways he practiced before and was inspired by the snake/crane fight as well as Taoism to create Wudangquan/Taijiquan.Second, Great general Chen Wang Ting studied some war manuals as well as studied some Shaolin Kung Fu near his village and created Chen Taijiquan(I believe originally called Chen Cannon Fist)
Legend has it (legend, perhaps not fact), that a woman was being forced to wed a man she did not like. He said that if she defeated him in a fight, he would drop his proposal. She created Wing Chun with a nun (or something like that) and beat the suitor. It is also said that her husband named fighting style after her.
The Zhang Sanfeng myth of the snake and crane is the story of taiji, allegedly. Wing chun as dragon877 said was created by buddhist nun Ng Mui who in turn taught Yim Wing Chun, a woman who had a one year to study and defeat a bandit. If she lost she would have to marry the bandit, needless to say she won.
but then that can be another made up sotry wing chun had a histroy of usage by the anti qing rebels the rebels only had a few months to learn how to fight so wing chun was based on practicality rather than skill over a long period of time the sotry of the woman marrying a warlord could just be 1 of teh stories made up to confuse the qing government

Thus the art was called "Red Boat Wing Chun" in its earliest days.
