  • Every Christmas eve my dad cooks sauerkraut, ribs, and red potatoes. Cooked in the same pan but he bakes it in an oven. I bet it would taste 10x better smoked on the grill! Have you guys ever done sauerkraut and ribs on the grill??

  • @jas68maro ...back in the day as a kid, spare or beef ribs with kraut was the typical way it was served. Not like todays "low and slow" without the kraut. Ask your dad. Ribs with kraut is excellent on the grill as the kraut picks up a lot of that smokey wood flavor. Thanks for reminding us and for sure we'll do it for YouTube!! -BBQ Pit Boys

    Please don't get me wrong, but that sauerkraut looks a bit... weird. Much too bright. Sorry, I'm from Germany.

    Add some laurel, cumin and/or juniper and clove. Leave the pepper in! Then cook it twice with boullion for a couple of hours "low and slow"!

  • I was born in the south, but my family comes from dutch pennsylvania.  This makes my mouth water for barbeque and german at the same time!

  • I use 50/50 ground pork shoulder and ground cured belly bacon in a natural case. You will need a pinch of saltpetre/curing salt mix if you decide to dry the kielbasa. I also spice mine with whole coriander seeds and whole black peppercorns. Any sausage should be around 45-50% fat content prior to cooking/smoking.

  • This is a great recipe, but you should try making kielbasa from scratch. There is NOTHING like freshly smoked kielbasa with some rye bread and horse radish!

  • I have a question regarding the use of the whole peppercorn. Does it soften up when it's cooked in there with the kraut? That kind of sounds like it'd be awfully gritty or crunchy if not. I'm kind of interested in trying it out.

  • Wow, a nice twist on a traditional thing poles do. I grew up on that. You forgot the Russian rye and horse radish. You need to go with a good spicy brown mustard for this. Also Pickled red cabbage or beets is a nice side cold or hot. I will not go into perorgiees to go with this. You guys are getting really good with the production end.too.
