Pls help! Im baffled! I followed all the instructions for this recipie and the dough came out beautifully, very soft & elestic, i did not have to add any extra flour or water. Let it rise 4 an hr, made holes with fork, put it into middle of hot oven at 200 degrees (gas mark 6). The bread did not rise AT ALL in the oven & came out flat ROCK HARD!! (even though the dough rose very high b4 i put it into oven). Pls can you help me understand what went wrong?? Used 25grms fresh yeast

hmmm... I am thinking either there was not enough moist (water), you can of have to work the dough with the water until it is absorbed. or the bread was overcooked.
I just made this bread. Its cooling off as we speak.
It smells delicious and I can't wait to taste it.
I would like to know what is the kneading machine you are using to make the process go faster. I had to knead 20 minutes by hand and I'll be lucky if I can use my hand tomorrow lol.
I can't wait for my husband to try this bread.

the one I am using is a 'cheap' food processor that I got from Target. Just make sure the the food processor has a 'kneading' head. it will say on the box. However, I just got a Kitchenaid stand mixer that can knead the dough as well - this machine is amazing but a little pricey (around $250). But I have been planning to buy it for the past 3 years until I was sure I was going to use it a lot!!!

yes you are right! the inside of the bread is spongy. but it will also depends on how you like it. if you prefer a thicker inside, then when you roll your bread you dont flatten it out too much, or if you like less of the spongy inside than you flatten it more (before baking). I personally like less of the spongy inside and more of the crust :-)

it's probably the amount of water you used. you should adjust it depending on the quality of absorption of your flour.the best thing is to add water little by little to your flour until you are able to roll the flour in a ball (do not add water all at once).while kneading the dough by hand, you can keep adding little by little either water or flour, until you get the right texture.if you are using the machine, it will be a little bit sticky (like in my video),just add flour.I hope this helps :-)
I am a bread lover, and moroccan whole wheat bread is my favorite. if you want to try it for breakfast, toast the bread and as a spread, add a mix of exra virgin olive oil and honey. this mix is heavenly.
