i also realize they cut parts of it out, but would someone please explain how you can call out a medium wellington of that size and get it in 4 minutes?

i can't fathom how to do that, unless you had it going already.

is that what they do when they call out apps and then the entree? start the entree right then?

None of them have the leadership to run a kitchen though. No potential in any of them. Although I really like Petrossa and Bobby. Not good contestants this time around though. Yes, I've worked in many restaurants be it Abigail Kirsch at Tappan hill, TGIF, Bloomingdales le provance, Neiman Marcus, and a few others. Always in high end gourmet restaurants.
