Her most recent recipe, Red Velvet, is now a favorite with my family! I'm just curious why we haven't heard from her in so long. How much butter do you use in your recipe? I think if I remember correctly, that batch used all vegetable shortening. Also be sure to use clear vanilla to flavor. If all else fails, Wilton makes a white food coloring to make your frosting white. I've never tried it, but I got a bottle the other day just in case.
Thanks for the suggestions guys! I did add some more milk to it during the last batch and it came out beautifully! I just just worried the petals would droop, but I found the right balance.

i took a wilton class corn syrup ,glycerine and piping gel work great ! piping gel is about the same ratio for cups of stiff icing to tsps....

How do you get your buttercream so white? What recipe do you use - mine is always very yellow!

Corn Syrup. Maybe a little more shortening?

Cracking...Maybe try adding a little corn syrup to your icing to make it smoother. Good luck!
