A nice variation of this which we often eat around Christmas with pork belly here in Norway is to use regular cabbage instead of the red one, and also a good lot of caraway. This is what in Germany is called "Saurkraut".
Hey, I am from Eastern Germany and we call this "Rotkraut" and its a typical sidedish in Winter. We eat this normally with potatoe dumplings (of raw or cooked potatoes - depends on region ) and with christmas goose. So you can use the leftover goose lard.
I think my grandpa just uses normal vinegar. But apple sure tastes very good.

Mmmh, yummy! I really like Blaukraut (or sometimes called "Rotkohl" or "Rotkraut"), especially when it is soft and tender and gives you that sweet'n'sour taste with a little touch of cabbage.
This dish is very helpful to fat rich meat (pork, sauerbraten, etc.) because the fibers of the cabbage soak off the fat and help to digest it. Our Omi's and grandma's knew how to keep us healthy even before science proved them right :)!
Just because it's not a Granny Smith apple doesn't mean it's "gay". Granny Smith's might be better but that isn't really politically correct to call an apple gay. It doesn't make much sense either, if you think about it.
I am German born and raised and this looks just like my mom makes it!!! I could almost smell it!!! This is also great with beef!!! Some potatoes and some gravy... heaven!!!

Up in the nort of germany it's also called "Rotkohl" :D Rot means read in German.
It's pretty delecious, but almost nobody is cooking it hisself. You can just buy it ready and heat it up.
It's also nice with chicken (:

Maybe because of the grain size of the salt - it is coarser than normal table salt.
