  • That Cotechino Italian Sausage is big & thick like my fully erect penis, obviousely its not as long & thick as the Cotechino but its still very large & impressive and thats why the guys love it.

  • We usually cook cotechino in boiling water for a very long time.

    We change the water every now and then so most of the fat goes into the sink.

    I would not recommend to cook a cotechino inside that bean soup... I would separate that and eat lentils instead of beans (with rosemary and/or bayleaf) .

    It's 100% NEW YEAR'S DISH! Every single Italian eat that on 31st december!!!!!!

  • I made this with spam and a can of chili. Take your chili and poke a hole in your can of spam (do not microwave!). Simmer for 30 minutes in big pot. Take out your spam and slice into coins like chef john did. Ensure you take it out of the can first. Then fry em up and put them on your chili. Enjoy!

  • @TheCoolKitchen mate you're not supposed to eat the casing. The casing is made from a layer of intestine. ;)

    Check out Persian markets, since most don't eat pork, they do make beef sausage, turkey and chicken sausage which they try to make taste like real pork sausage (Roommate is from Egypt and loves turkey sausage). Its a very good alternative for people who don't/can't eat pork. I'd go the turkey route, fries/grills very nicely and (to me) tastes pretty close to regular types of sausages.

  • WOW! I can't believe you just posted this! I was at a continental deli today, buying some italian sausages so I can try out your lasagna recipe and I saw these massive cotechino sausages and thought "ooooh, how would you cook those!?" I got home and BAM!... Chef John comes to the rescue.

  • That's really good but guys check out - Calabrian Sausage. A sausage from Calabria (Italy). The best pasta I've ever eaten in my life was with this thing. This sausage is very smoky and contains a high level of chilli flakes and seeds in it. Ask in your gourmet stores for that.

  • Chef John, I hope this doesn't sound weird, but you have the most soothing voice of any cooking show host I've ever seen/heard. (Maybe it's a combination of that and the music, haha.)

    Aside from that, I love your shows - I instantly became a fan and am slowly becoming an addict. They're both comforting and inspiring, (for some reason, my cooking repertoire grows every time I watch an upload!) not to mention fun to watch, so please continue.
