Tootsie Rolls are the human-food equivalent of dry, stale weeks-old bread. The real danger is when the kids start feeding the tootsie rolls to the ducks, whose gizzards will immediately explode from an indigestible plastics-based ingredient contained by the confection.
You're not inverting behavior with this experiment, you're just turning something that's altruistic and making it more selfish.
Normally the children would feed the ducks and get nothing back in return except for the joy of doing something good for the ducks. Now the children are only feeding the ducks to get candy in return. You can see in the video the kids don't even care about the ducks, they toss the food over the bridge without looking even and quickly run to get the candy.
Cool! But considering how the researchers / group seemed to be closely present at all times, a wizard of oz type testing would have been easier, cheaper and just as effective in proof of concept, which seems to be that children are just like ducks :-P

@caragenerico Your answer 00:08 to 00:20 << They simply try to give a twist to the normal human behavior, for fun and because it's interesting
