You just need to practice is all. I sucked at using the wheel before, but then i gave it a few times and i got real good. Not as good as the players online. Still though, i like to use the gamecube to play at my full potential.

The Wii attracts people who have never played video games before, or haven't played much in the past, so you will run into people who aren't that good quite a bit, then there will be times when you race people who are extremely good. After a while you will see that it won't be easy all the time.

You don't get 12 players all the time, it depends how many people are playing on the server it connects you too. You will most likely race a different amount of people each time online, and when there is 12 players, it doesn't lag at all. Just like Medal of honor Hereos 2 that is 32 players online there is no lagging. Just because Nintendo fucked up with the online in Brawl, doesn't mean you have to be a dumbass and assume all online Wii games will lag.

There can only be 12 human players at once over the internet. So each player is using their own Wii and TV. There is also the ability to have 2 players online per Wii, so it would be split screen if you did that.
