This is a French Basque chef so not as much like the Basque food we ate in Bilbao and San Sebastian. The pintxos in San Sebastian are incredible! I went to Piperade for my birthday - - it was excellent and I would go back. It isn't quite the same as the food I ate in Pais Vasco but if you can't go to Basque Country this is a good substitute for anyone wanting a fine dining experience in the San Francisco Bay Area.
A little "too marketing" this idea of basque. First of all, what he does with the txakoli, it is what we do here with the basque cider (sagarra), but not with the txakoli. Second, the tapas we call it pintxos, and they're pretty different that what it appears on image. I am a basque person, living in DC, and I have the feeling from the images, that it is far too customized to US style. Come to St.Sebastian or Pamplona and enjoy REAL BASQUE food !
