  • a great way to thicken the sauce is to add some tomato paste. It doesn't really interfere with the spices of the curry, and it also adds and extra special flavour. It's really tasty.

  • @ChaosNova1 I dont know... try it and see for yourself. I wouldn't though. The pasta sauce, unless it's thick, or in a paste form wont really thicken the gravy. Plus, the pasta sauce may have it's own blend of spices that may over take the curry. You cant go wrong though... curry is just a generic term for anything in a sauce practically.

  • Pataks Curry paste already has Garlic so why add more? The only thing you need here is the curry paste (about 2 tablespoons), chicken and onions and maybe a tin of tomatoes - these herbs are not used in authentic curry dishes.

    i know as i have to fiji, homes of the poor.. work never ends for a lady, hardly see them sleep...

    i adore this lady, she really knows her cooking, in her own way, doesn't matter, we are all humans, we learn differently...

    its a pleasure to watch someone cook with effort into it... even tho, some ready made masala helps... as cooking is not easy... on a day to day basis. keep it up gal :=)

  • thank u jemeela, however, i would like to know how to make the curry sauce after all it is curried chicken, if you want to show people how to make curried chicken shouldn't the main thing be making the curry sauce. We do know how to chop herbs and garlic and chicken the curry is the main thing. Nonetheless thanks for the effort, the food looks delicious

  • the raw meat is very difficult to clean from wooden board. even if you clean with antibacterial, the germs are there and can very easily transfer to other foods if you use the same board. glass board is the best option for meat.

  • I think you should read up on your pros and cons for wooden cutting-boards. Fact is, wooden cutting boards kill most germs naturally within a very short time. So unless you treat your cutting boards like a swine, then you are completely safe with wooden cutting boards.

  • Bacteria like E Coli and SA are in meat and cannot survive on surfaces like wooden board for more than 24 hrs. Unless you are not planning to use that board for 24 hrs after cutting meat, you are fine, if not they are still there in tiny slits of the board. If you are comfortable using it then I don't have problem.

    By your logic, if you curry the chicken if becomes CURRIED CHICKEN not curry chicken.

    In this case, chicken is an adjective, therefore "chicken curry" is grammatically correct. "Curry chicken" is not.

    Please. If you're going to be fastidious and pedantic you could try being correct as well. Same goes for rajivunome.

    Although as jpersaud rightly states, in some parts of the Caribbean, people do put the word curry, before the main ingredient, in Jamaica, curried goat is known as, curry goat, but that's an example of a regional dialect of course, rather than grammatical correctness.

  • this lady is amateur dont listen to her, first u dont use bottled sauce and u dont put the chicken in the pot 1st u cook the onions and garlic, tomato and curry paste then add the meat  and did she wash her hands?

  • Welllll yes, jpersaud, you obviously know what you're talking about, and mostly I would tend to agree with you, your method is the more standard method, true, as a matter of fact, I made some a few hours ago, by your method, and that's how I usually do it, although I didn't use separate spices, just a few teaspoons of curry powder. A few points though, she's obviously a home cook, and I don't think she claimed to be a professional. Out of space, more to follow.

  • Yes jp, fair point, hand washing when handling any meat, and especially chicken is vital, I'm guessing that the lady did that, but forgot to mention it. Her method isn't standard, and the mix of herbs seem unusual, and the sauce is rather thin, personally, I would have thickened it with some cornflour paste, bite sized chunks of chicken will cook in about 5 minutes, but they can also be slow braised as she has done, thing is though, this is her own personal version, and it probably tastes fine

  • As regards paste, well she used Patak's, which is one of the 2 main brands sold in Britain, the other is Sharwoods, both are Indian firms, the ingredients are the same as from scratch and they're very good. Most people wouldn't be able or willing to make that themselves, the thing about curries is, there are many regional variations and personal preferences, I add sultanas and sometimes sliced almonds, not authentic , but I like it. I think the important thing is that people do try to make it.

  • sultanas and nuts in curry is regional. curry out of a jar isn't a real curry, most places you go out for a curry aren't the real deal, if your in birmingham go to soho road in handsworth there's a place called sukhdev's chandni chowks restaurant go there, amazing food. ;-)

LOOK at the oil floating about at the end .. im indian and our curries dont turn out this wayy .. we make it naturally .. curry sauce :s .. haha but not bad .. might taste good .. but cud be better if u put in 2 tablespoons of yoghurt in the mix and a teaspoon of cream or cream cheese .. and ur oil problem solved .. :D ... cheers

    But as a student - I found out a much easier and cheaper way to make Curry - your supermarket's home brand canned Chicken Curry.

    Yesterday I found an offer of three cans for a quid. All you gotta do is empty the can and microwave for like 3 mins, and you can buy chilly oil or other herbs.spices to add to make it taste slightly hotter or spicer.
