The open surface area 27X27 if you subtract the 3" from the 2X4s, right? 3/4" Plywood is high impact absorbant and used in flooring. You should be fine. You can search PLYWOOD DESIGN CAPACITY, OR you can do what I did and call a contractor or lumber store and ask them. The frame will definitely be stable enough and can withstand 500lb hopping on it. I know this because we tested it (350lb person with 150lb)...
