This is dumb. The best way to cook steak is on a flat iron griddle. 9 times out of 10 when you eat a steak at a restaurant, it's been cooked in a pan not on a grill. They do that because it's the best most reliable way to cook a steak right and cook it right consistently. I cooked steak on grills for years until a friend set me straight. I'll never cook steak on a grill again. I use a 16inch cast iron skillet now. You've never had a better steak.
@gurumagoo My grandmother also would never cook steaks on a grill. It was always a iron pan. She would lightly flour then only use salt and pepper nothing else. She would cook them low and slow in that pan and they would be the most flavorful juicy things you ever ate. Didn't matter what cut either they all turned out great. I realize you shouldn't flour a steak but trust me it tasted incredible.
I love how she spends the time to do it right, dry it off, oil and season it and then put the unseasoned side down first. That way you can season the other side BEFORE it cooks.
You showed us that you put the lid on when searing but put the lid on to finish the cooking. I know these dome grills are hotter without the lid. Dont we want to sear with the lid off ? My last grille I think I left the lid off when searing fo rmax heat then covered to lower the heat and finish the cooking.
when i eat out? they ask me, do you want A-1 or other sauses. i tell them NO. i want to TASTE the real meat flavor. A- juice on the side is ok. no more.

I read alot of people complaining about the lack of seasoning, and that it was too plain. If you're starting with a good steak (a nice thick well marbled Prime Rib steak), salt and pepper are the only seasoning you need for grilling. After all, aren't you eating it because you like a good STEAK? A good steak sauce can be applied later, or better yet, on the side for dipping.
Thats how I like my steaks...but taste is also a very personal thing.

Oil is not water. They're nothing alike, other than being liquid. Can you deep-fry in water? No. Deep frying is considered a DRY cooking method, even though it uses a liquid.
She dried the steak as much as possible so the oil would adhere to the meat. The oil helps to lubricate, and set in the grill marks.
Grilling etiquette? If you're offended at grilling technique, seek help.

Shorter cooking time, better dispersion of the heat for a more even cooking through out the meat, better all around. This will help any steak, even those not as good cuts.

You people are nuts. Oil is not water. When a steak is wet, the water turns to steam, which makes it soggy. That doesn't happen with olive oil. And a good steak will only need salt and pepper.
