  • They're called bean sprouts...b.t.w. can i use brown rice instead of white rice?

and is it true that you must use old rice to prevent it from sticking to the pan?

And what did you meant with Dark soy sauce? Is it the one that tastes like B.B.Q. Sauce? [Sugary and thick]

  • You forget to add the white strip that looks like onion but tastes different, i forget it's name...but in my region that's what they put on the dish..anyways thank you for uploading your instructions...I'm off to make my own rice! :)

  • Sorry but it's looks too soggy... the rice is a bit sticky and not loose.

  • Chef Kai, I followed your insructions and made shrimp fried rice for the first time, and it was amazing. Thank you for the demonstration, it really helps :)

  • very easy i love chinesse food

  • To comments below- you will not die from scratching a pan, nor will you get "heavy metal poisoning" from these activities. The reason you use plastic utensils with nonstick pans is because you may damage the coated surface, causing a degradation of surface quality, or ingest small quantities of the coating. If those urban cooking legends were true, you, and everyone who had ever eaten from pans would already be dead, or on the way.

  • could you please show me how to cook singapor style chow-men thankyou .

  • what about Bean Sprouts??

  • just made this. Thank you! but i got some strong soy sauce. I had to add water in order not to be so strong

  • ive seen a lot of people try this at home and couldn't quite get it (in my opinion)..yours look really good imma try it tonight..minus the carrots

  • YummY

  • YOU SIR IS A GOD AT COOKING!!!!!!

  • How do you prepare the rice itself?

Do you use it immetiately after boiling, or do you have to place it in the refrigerator to cool off first?

  • @starguard from what ive seen, the rice should be leftover from the day before and not sticky but so that each grain is visible( i.e not mush, lol) but thats just what ive seen and will try tonight-:) good luck with yours!

  • @mlee2001 Thanks

  • what kind of rice? I only have the minute kind

  • @madamechristian You can use minute rice too. In the video he said he used minute rice.

  • I don't want to be your friend on Facebook. Can you please, place the recipe on the Video info?

  • @itkman yeah, using a metal spatula on a heat tempered wok, or pan of any kind is a good way to get heavy metal poisoning. go plastic bro

  • cool! uh but thats a lime at 3:57

  • soo ... fucking...HUNGRY!!!!! nommmm shrimp frked riceee

  • I bought Chinese fried chicken in take out joint and it was plumpier and more CRUNCHIER! SPLAIN! anyone?

  • @BenGoldking

It could be the way they cook it. Often they will cut up a whole chicken. They also fry quickly so the meat is cooked. Some fast food places don't have the oil hot enough and it is just soaked in grease. This way the frying is quick but gets the job done. I just got a wok and love the way it frys

  • the reason i looked this up was because i wanted some fried rice haha now im hungry :'(

  • You r fantastic!!!!!

  • i'f trieded this at home an it came out perfect! Thx

  • love your cooking.. thank you very much

  • I hate seafood, shrimps i can eat, especially the way you made them, but oyster shellfish octopus and others are pretty disgusting.

  • I'm sorry Itkman, I love you recipes and all and I don't mean to sound racist but you foreign dudes get the egg bit all wrong. When I cook fried rice, I put the eggs at the very last so that the rice may be coated with it. Why do you scramble the eggs first?

  • @philipmarie1854

i believe its just personal preference more than anything

  • imagine this guy on iron chef america! :D

  • I often make this but with brown rice and instead of shrimp i use spam, wieners or chop up sandwich meat.. this shit really kicks in when you're drunk..

  • @mixwell1983 YIKES!!!

  • @freshair3451 - Don't knock it until you try it.. at 3am when you're out of shrimp you have to MacGuyver that shit haha

  • @mixwell1983 Sorry ...I'd rather drink bleach.

  • Okay I made this dish in less than 30mins , It was awesome! All i need is some red curry to go perfectly with this. Thanks Kai!

  • Why does my shrimp taste so dry? Please help.

  • @YukiCrossist dont cook so long, remember, ur cooking this shrimp once by itself, and once with the rice, so cook the shrimp a little less

  • @YukiCrossist i think it's because you bought dry shrimp

    IDK

  • @YukiCrossist you probably just cooked it to long, also stir fry it only slightly until the shrimp is turning pink and add it to the shrimp to the rice when it is almost finished

  • you must have worked at a chinese restaurant because I tried your recipes and they all taste perfect like my local chinese take out place! plus the way you cook so quickly has to be that your a chef!

  • One of the best fried rice videos I've seen on youtube.

  • That was awesome, now I'm hungry.

  • thanks man this came out so good!

  • Dear Chef Kai, you are great, it looks delicious! . But just as a friendly suggestion... Please do not use a cabbage leaf as a "vegetable on the side". Please. At least just put one slice of a tomato with a cucumber perhaps? Just please don't throw a cabbage there. I would not eat that raw cabbage, or find it appetizing with my meal. Thanks, by the way I'm amazed that you made such a great dish w/ an electric stove!

  • eat raw rice, spam, cooking oil, vegetables, and cook them in ur stomach

  • Im hungry now lol

  • Is teflon one of the ingredients? Cause u scraped it off your pan dude.

  • what if i need it for for 4 people

  • This dude is badass

  • can i use prawns instead

  • @chaosstarr A friend of Chinese descent once told me: "You can add any meat". Pork, chicken, lobster....etc!

  • 3:54 "serve this with vegetable on the side" (insert yellow iceberg leaf a.k.a 0 nutrients haha)

  • ahhhh!mom would kill me if i used metal in that pan!!!! lol

  • @darinizovrit i know huh that the rule for that type of pan

  • @darinizovrit yea cuz you could die my becuse you are scratching the pan and when the next time you make somthing on the pan it is rusted and you will die when you eat it.so she right

  • @darinizovrit OMG MY GRANDMA YELLS AT ME ALL THE TIME FOR THAT!!!!

  • @darinizovrit

there are some non stick pans made so that you cant scratch them even with metal. They're really expensive though, but yeah that's probably what he's using.

  • terrible!!!!!!!!!!!

  • @peterczc247 it looked so good

  • @flattop11438.....still terrible.

  • I've gotta show this to my mom; she's obsessed with this dish!

  • was the rice cold? can yo uuse rice right out of the pot?

  • @carpetmonk let me know when you get the answer!

  • @83912daniela i guess it was room temperature.. shouldnt make much difference i suppose, maybe draw in more flavour right out of colander. i still prefer mai-fun though.. i have been expirimenting with sesame seeds, and getting right temperature for sesame oil (too hot burns it quick) i found sesame seeds raw for 1 dollar u.s. per 2 ounces! i toasted them in iron skillet, but not toasted enough i think. crunchy, but without smoke taste. (toasted sesame is 6$ per 1.5 ounces here!)

  • Why does he add the rice so slowly?

  • @DesiRobot The rice sticks together so he kinda chops it up with the spatula.

  • any kind of rice works?

  • @espinoza956 I usually make it with jasmine rice...it has a great aroma and add lots of flavor. You can find jasmine rice at any of your local asian market. If you can't find jasmine rice, long grain rice should work too. Be sure to look for a video of how to cook the rice first before making this. Hope that helps.
