there are some non stick pans made so that you cant scratch them even with metal. They're really expensive though, but yeah that's probably what he's using.
@83912daniela i guess it was room temperature.. shouldnt make much difference i suppose, maybe draw in more flavour right out of colander. i still prefer mai-fun though.. i have been expirimenting with sesame seeds, and getting right temperature for sesame oil (too hot burns it quick) i found sesame seeds raw for 1 dollar u.s. per 2 ounces! i toasted them in iron skillet, but not toasted enough i think. crunchy, but without smoke taste. (toasted sesame is 6$ per 1.5 ounces here!)
@espinoza956 I usually make it with jasmine rice...it has a great aroma and add lots of flavor. You can find jasmine rice at any of your local asian market. If you can't find jasmine rice, long grain rice should work too. Be sure to look for a video of how to cook the rice first before making this. Hope that helps.
