They may have had regular kneepads on under the boots or sweats, but that's it. I imagine they had worked out in advance what was a valid target, etc. The challenge was originally issues on Sword Forum.

I wonder what they used for protection, steel helmet, gorget, gambeson, gauntles and an "elbow protection", what about the legs?

I really would like to spar this way!
