    The reason of the chimney at the front, out of the dome is because in that way the heat stays inside after you close the door cooking for longer .

    problem with cement is that is not for high temperatures and starts cracking and falling down on food as sand-dust .....that's why the gap in between bricks has to be reduced to minimum .

  • cutting all those bricks in the dome for shape, must be a whole lot of work and precicion comes out super, cheers mate.

    question, if you made it simple and used a lot of concrete and regular cut bricks, would it then fall down? thanks

  • Can you use ouse bricks in the same design? It look amazing and is exactly what l have been looking for.

  • @antonthesoccerlegend the best you can use instead of fire bricks are hand made bricks, just the old red classic bricks that are not pressed . the only worries could be that in the long term could start dropping small parts on the food but with a regular maintenance like an overall brushing or rendering with fire cement to the internal side of the dome can last for very long time.

  • thanks ! Those bricks come in 2 different angles or shapes, my supplier call them 55 and 65 mm on one side, so the combination of them give me that arch .

  • hi Jackie, it takes around 1.5 hour to heat up to top temperature. To cool down can take more than 24 hours. A top quality pizza takes 3 minutes to cook. This dome shaped or pompeian domes ovens are better as the heat works on refraction against the top and then coming down in every direction.

  • thanks for watching my videos and for your comment. What you are showing is just complete ignorance about this kind of wood fired ovens that are called pompeian dome. The reason why the chimney is at the front is that in this way the heat from burning runs all the way inside the oven heating the dome till they go away form the top of the door arch and the second reason is that in this way when you close the door the heat remains inside the dome cooking for longer time holding the heat inside.

Although I do love his wood fired oven...it's very classy. I just think with cap and trade...our companies will all leave so where they can make a profit. No one will be able to afford anything.
