Now, this should not be hard given the over 1.5 million species. And there should be billions of fossils., even of screw ups (mutatons).
What is the biological mechanism that stops those little changes from turning into big changes over time? It’s not programmed into their DNA.

The chance is small, but the universe in a HUGE place. 125 billion galaxies in the VISIBLE universe, each of those having an average of 200 billion individual stars. Just by sheer chance, there are thousands of earths out in the universe. Also, the figures that are used to calculate these things are almost all erroneous. And anthropic principles are just fancy ways of saying "If things were different, then they'd be different" So IMO those have zero value in a conversation
Regarding the beginnings "tactic" I say this because science is a search for causes and I find that many atheists conveniently want to SKIP the origins of the universe and fast-forward to evolution. Why, I ask? I would want to start with first things first.

An intersting line in the sand is what I see here. Creationists will refuse to define what they believe is "life" quantifiably, because rationalists would have an answer for them. The line in comforting vagaries foregoes an enquiring attitude, and that's how the church keeps its people brainwashed.
