Hey, I think you would have better results with a corse salt and pepper. It gives you a way better crust. You'll like the results. Also, I'll have to re-watch the vid, however, you realize that wasn't indirect cooking for the steaks right? Typically you sear them over then coals then slide them over to the side with no coals. "Sear and Slide" :)
I've been using a very full chimney of charcoal. Maybe that's why it always goes mostly out with the lid on? Still getting used to my little grill, and trying to take advantage of the lid. With my old grill, I would use two chimneys of charcoal, and that would burn so damn hot with the lid off i could do steaks in about 4 minutes with a really good sear, but medium rare inside.
@jgio1992 if it's anything like a brisket then marinate, use a good spice rub, low heat, slow cook (indirect heat for at least an hour)... it'll be like butter. :)

You got it right. The store close to my place, Meijer, has them more frequently than other stores and of good quality but definitely rarer to come by than the other cuts of steak.
The steak was yummy :). The centereye cut (sometimes called chuckeye) is a really good cut of beef with a great price - something like half the price of ribeye. The chicken was good too but I had to leave it in the grill about 40 minutes longer. Thanks!

@picknshoot The Smokey Joe Silver works well with half a chimney when smoking something, a full chimney when grilling.
