@Xaavier26 Notice how they say "take the orange" then they proceed to clean out the urchin and "put orange back in" hence eating orange, try listening not just watching the poor quality of the video

your soposed to cut from the sides,

rinse in water

and then only the orange stays in a star form and it looks like a plate ^^

I have never heard them called sea "hedgehogs" but I like the name better than "urchin"--it suits them perfectly! VERY interesting recipe, Mary and Jose.

in dutch the are called "Zee Egels"wich leterrly means sea hedgehogs now i know that it isnt sea hedgehog but sea urchin in english
