Usually all the French want (at least the merchants) from foreign people (not just Americans) is that they at least try to speak some French. If one tries but then have to resume in English/Chinese or whatever is the tourist's native language they (merchants) will often (if not always at least to stay polite, if they are so) speak that language in question (if they know it themselves, of course).
I felt the same way when I went and I never saw that rude, mean attitude. It was the best 6 weeks of my life. If you treat Paris like it's where you live and where you are living instead of treating it like a theme park then I think that attitude shows through and people treat you with more respect and courtesy.
