Vitality here means energy (i.e. 'vitality of young children'..yea, u get it rite?) basically the gingerbread man has a lot of energy, possibly neverending supply of energy.So when his luv is bigger than the GBMan's vitality's like saying the amount of luv u hv 4 someone is..HUGE/A LOT/NVR ENDING!
