ERMAC stands for Error Macro where in the original Mortal Kombat for the arcade there sometimes was a colour error where Reptile (who was a hidden character in that version) would have his outfit glitch out and be Red instead of Green.

Eventually it became an ongoing joke/rumour of a character until he came out in UM Trilogy.
