Another variation of this recipe is to skip the grate in the pan, place the roasts in an uncovered pan with an inch or two of beef broth on the bottom, with sliced onions and one or two garlic cloves at about 275F until done. Now you have some Au Jus Sauce to pour on those buns when serving! -BBQ Pit Boys

Why do you use sea salt for this and not for ribeye or chicken? Also, I've found vegtable oil is preferable to olive oil with anything but noodles. Though copying your method directly is still better than my own attempt. I think it's charcoal placement.
Hey BBQpit boys (Bob i reckon?). I have a guess: You wrap the meat in aluminum foil while letting it cool off, because you dont want the meat to lose its moisture and juices - am i right? And how come this recipe takes only 2 hours to cook, while your BBQ rib recipes take much longer (about 3.5 to 4 hours)? Just wondering :)

hey woogleslap, use a thermometer whenever you can to q the roast the way you like to eat it. Generally we pull 'em off the grill when medium rare and if someone wants medium or well, we cut a slice and put it back on the grill. -BBQ Pit Boys
