  • no because you are adding sugar syrup which is around 126 to 130 degrees, so it cooks the eggs by the time the process is completed.

  • Sht I failed. The sugar syrup still had some water and the meringue was soft peak. I used it w/ strawberry ice cream and chocolate cake. It tasted horrible! :(

    That's a part of his character, he gets nervous allot so to release it he slaps himself, its normal in a hectic world.

  • looks good. when I was a freshman in college 20 year ago, I remember watching chefs make this stuff in sheets. It was incredible to watch.

  • @junebugsinjuly You have to be quite quick, maybe turn the temp down in the kitchen a bit so you can work for longer. Also make sure you get an ice cream you like and a cake that goes with it on its own. Get those two to play and if you like get the meringue that plays with the ice cream as well.

    Baking has its rocky roads, its up to the chef to keep surviving and doing it again. Listen every pastry chef has curdled a cake or over/under cooked a cake. But you still have to get back up and try it again. Never give up, NEVER!

    i've never tried meringue or a baked alaska, so i don't know if it matters or not

  • If you want to freeze it in advance... Do you use the blow torch on it AND then freeze? Or do you apply the meringue and pop it in the freezer, and then blow torch before you serve?

  • @alatha3 Just apply the shape of the meringue, then freeze it. Then the day you want to serve it (don't forget you need to defrost the cake on the inside as well), let it defrost for a few hours at room tempreture and then put it in the fridge for about an hour to help firm up the meringue again. Then blowtorch it. Hope it turns out well :)

  • @michelle13579123 No you shouldn't use French Meringue. The Reason for this is because 1) French Meringue isn't as stable as Italian, 2) The French Meringue is raw and blow-torching it will not cook it sufficiently.

    Italian Meringue is cooked by pouring the hot sugar syrup into the egg whites, therefore it can be eaten without any further cooking.

  • Hey easy, easy !!! Whatever this guy does is perfect! Baket alaska doesn't mean you have to pop it in the oven. this is an old fashion style from 80-s. flambeing it like Gordon does is more easy and appropriate way of assembling this beautiful desert.

  • most normal cookery shops sell them... and you dont have to go professional, you can get them for about 10 quid just for use in the home kitchen! happy cooking!

  • No blow torch ~ no worries. I make mine the 'other' way...5 minutes in a preheated 425 oven.

    For a festive look ~ before putting it in the oven, I put half of a clean egg shell (as a little bowl) pushed gently into the top of the meringue. Before serving, fill the shell with brandy and light. Enjoy immediately!

  • It softens a bit, but does not melt. It get insulated by the meringue!

  • @PrincessNUN You don't need it. As the name suggests, it's supposed to be baked. The idea is that the merangue and the sponge cake insulate the ice cream. Traditionally it's supposed to have fruit in it as well, in the form of jam.

    I suggest searching for "8 oz Butane torch" on a serach engine. That way you can buy cheap 8 oz cans which are cheap and easily replaceable. In Japan there are quite a lot of them around.

    Alternatively, if you don't have a torch, you can TRY to bake it (baked alaska?) and then put alcohol on top and set it alight. Got that idea from Heston's version.

  • @malayrojak Why bother with a blow torch? Just use a lighter or a match, like I did. Better yet stick it in a hot oven for 20 seconds. Works perfectly. GL with your baked alaska and merry christmas :D

  • @PrincessNUN Don't worry all you have to do is turn on the top grill of your oven or the oven really hot.. and then put the baked alaska in... watch it really carefull as the merengue will go golden brown very quickly! Will turn out beautiful even better than with the tourch! The merengue acts like insulation so the ice cream wont melt down... good luck! and enjoy it ;-)
