They manage to turn ingredients that may seem undesirable to some, to wonderful works of culinary art. It's something they developed because the aristocrats were taking all the good stuff (which they paid for with their heads after the revolution).
Who would imagine that goose liver, fish eggs, snails, etc. could be turned into something delicious and luxurious. Add the delicious sauces and various cooking techniques and voila!
I love Sakai-san, but i really do hate it when he and other iron chefs just think... "umm... I know, (insert ingredient x), I'll make it tastier with caviar AND foie gras AND trouffles AND uni)... And everyone else just says things like: 'ohhhhhh how luxurious'...
I really hate that adding of expensive ingredients all together, surely they're just trumping flavour over flavour!
'theme: 'toe nail', I'll wrap it in tile-fish with foie gras and truffles, topped with caviar and uni' rubbish!
I have to agree with you. I think Sakai-san is a masterful chef and you can see his creativity shine when he's thrown into battles that have a theme that he and his style are unaccustomed to dealing with, *but*... He does often fall back on foie gras, truffles, and caviar combos, sometimes gaining points seemingly just because of the caliber of his ingredients rather than the originality or the integrity of his dishes.

@greattlemurs first off dont include Sakai in that statement..i personally have met him and he is one of the most humble men on the face of this planet. He respects his ingredients and has a passion for food like i have never seen before. I was a finalist in a selection for hells kitchen season 5, sadly i didnt make it but the only other person i have met who respects his ingredients nearly as much as sakai does is gordon ramsay. i say met, i didnt get to meet him but i saw a video promotion

If you add Foiegras or caviar, it is no longer a lamp recipe but a foiegras or caviar recipe...
