  • I hope you either sterilized the knife or used different knives or at least cut the apple first since your experiment would be glade otherwise the contaminated knife would be too large a variable

  • Thanks for sharing the information. I never believed in anti ox agents and always treated them as marketting thing.

    But I came to know that if I take a vitamin C tablet before/after eating apples, I can live without massive bloating / gas. This may be relevent to your expriment as well.

  • Sprite does the same thing. You can save apples for a long time without browning if you keep them soaked in sprite and it doesn't take the taste away.

  • Wow... I thought that apple polyphenols(from the skin) are the most powerfull ANTI-oxident!! not oxident.. they exceed any other polyphenol by far on the ORAC scale

    it's interesting that we studied enzyme reactions in avocadoes (similar to the apple example you use) and included lemon juice not as an antioxidant but in its role as an acid: denaturing the enzyme that would turn the avacado brown. i wonder where you got your info from since it wasn't from the course.
