So.. I pretty much think I need a way to take this video where ever I go. You explain what having Celiac means so much better than I have been able to.

I am wondering though what types of symptoms you have when you accidentally ingest wheat, rye, barley, ect. I was diagnosed in 2005, yet I haven't really ever had symptoms. Or, I have, but haven't recognized that it was because of food that wasn't on my diet.

I have but one comment, what 5 people didn't like someone sharing a real and life changing disease? Any disease that affects what you can and cannot eat sucks! Ask a Diabetic how they feel about donuts. Ask a heart patient how they feel about McDonald's french fries. Ask someone with Celiac Disease how they feel about noodles.

Interesting, this is the first time that I have heard of the disease. I'm wondering if it is at all related to leaky gut syndrome, which happens when the small intestine develops fissures that allow much larger macromolecules get absorbed than are supposed to, creating all kinds of problems.

They don't do gluten challenges anymore..positive serology is considered "good enough" by most GIs.

Here's how I think they did it: There was an epidemiological study in 2001 that, in part, took samples from random "healthy" blood bank donors. Of those samples, 1:133 had positive serology for very specific blood markers of celiac disease.

Some gluten free food does taste good. I think it is a matter of getting used to the taste. The problem with our society is that we are all so used to eating gluten rich foods without knowing the harm. Thanks for the great video!! =)

someone who can tolerate small amounts of gluten might try sprouted grains. Heck, anyone should. Sprouting partially breaks down gluten and breaks down anti-nutrients. Sprouting, or at least soaking and partially fermenting, makes grains, beans, nuts and seeds all more nutritious and digestable. Historical harvesting and preparation methods had this effect. Try it!
