The measurement 3/8 to 5/8 is the HOT CHAIN setting. The setting I demonstrated is the cold setting which is 5/8 to 7/8 COLD. Please check your facts, the setting is listed 3 times in the 2003 service manual (1 scheduled maintenance table, 2 scheduled maintenance procedures section, 3 drive section). Using the hot setting on a cold chain will make the chain to tight when it gets hot. this can damage the inner primary and the transmission 5th gear main seal causing the bike to leak fluids.
I stand corrected! An oversight on my part, thanks for picking it up. The factory manual for my '99 Road King FLHRCi states 5/8 to 7/8 freeplay when cold. My last H-D a '92 FXRS Low Rider has exactly the same measurement quoted in the factory manual, hence the reason I said 'most' big twins have that setting. Anyone worth his salt should always check their own manual for settings as these can sometimes vary. Good to get some feedback when we trip up, none of us is perfect hey!

You dont throw away your plug. Dont know why he would tell you that. Only the old gasket on it if its torn..i re-use mine all the time.
