the mutinee was before they stole the cursed gold. Jack was abandoned in an island with a pistol and just one shot so Barbossa and the crew sailed to the cursed gold. Jack was not in the ship by then, that's why he was not cursed.He didn't touch the gold

Sparrow didn't join the crew when they rampage the cursed gold.But he steal the gold coin from the place where Barbossa's hid all the gold coin after he recollect from all over the world.

The place where they sword-fighting was a place Barbossa hid all each golden coin
