People should aim to get the little 'hop' out of their catching. And also, the 'pan cake catch' as you explain here can be easily improved. The way it is shown is actually prone to attract layout D's because it is too close to the body.
The preferred method of catching is at full speed and as far in front of the body as possible. Keep your bottom hand flat, thumb straight up. Keep the upper hand at 45 degree angle, slightly foreward. Guide the disc into the lower hand/thumb with your upper hand
