I think your right. Each piston or jack must be underneath the buildings vertical columns. When they cut out each floor, they probably cut each column and raise the piston back up. That's a good way to take down a building in a sensitive area. I'll bet it makes it easier to recycle the material.
My dad worked on a building in Regents Street, London., where they actually took out the whole of the inside of the building and left the front and back walls, then replaced the insides and refurbished the outside
Many years ago I saw footage of a guy who torn down industrial smokestacks one brick at a time. He climbed to the top shimmied around the perimeter, chipping off each brick and throwing it in the center. This video dredged up that memory.

Their taking down a building in London (next to London Bridge Station) from the roof down and lowering the rubble through the empty lift shafts, They built a tower crane up the outside first and are lowering the stuff down, also they aim to recycle a high percentage of the building, glass, steel and such like.
This seems extremely labor intensive, expensive and dangerous. Although it would certainly be cleaner, quieter and less damaging to the surrounding buildings and environment.
