Did you let the campden tablet sit in the must for 24 hours before adding the yeast... If adding yeast to soon after adding the campden tablet it will kill your yeast but im guessn you might already know that!!!
Have you aged your wine in the plastic carboys/demijons for a long period of time, say 6 months? I've heard that oxygen can permeate the plastic, but i find that hard to believe.

I cannot see the oxygen permeating the plastic. the plastic is food grade so think that it would be OK. I can't really see the difference between that and a glass bottle with a screw top. the only thing is the light, store in a dark place.
they came from a home brew shop in brisbane australia. they are hard to find and that is the only home brew shop that I have found them in. worth the effort if you can find them cheaper and not as easy to break.

Where did you get the plastic carboys? Maybe the acid content killed the yeast(?). Great vids. Thanks
