Chiropractic has no standardized definition because it isn't scientific - it's the modern day equivalent of snake oil. It's an expensive massage and nothing more.
I'm not that found of chiropractiors myself. And you are right that many of them are totally lost. But there are a group of them who acctually follow the times and keeps up with science. My guess is that Chiropractiors, naprapats, osteopats and massage thearapy will merge in to one in the following hundred years or so.
