  • Why do you waste too much product? I mean.. as a costumer i don't mind having some few weird looking fruit pieces.. at the end, it's more quantity and that's always right when you go out to eat.. to have more product. I've never understood that about luxurious restaurants, if you are spending in good food and you're paying for it.. you may as well give us amounts that make us feel full.

    Just because you trim a product down for better visual appeal doesn't mean that it's being wasted or thrown in the trash. It's my job as a chef to make sure every bit of that melon gets used. In fact, the follow up video to this post is how to filet and pickle the rind. Watermelon trim can be served if you like, or you can save it for staff meal. In the past I've used my watermelon trim for a dessert sauce. I guarantee if you ate at Stella, there's no way you would leave hungry.
