The composer is John Swihart. He did all of the random music for the soundtrack/score of the movie. I don't know if this song is on the soundtrack (it may be that they just made this song specifically for the DVD menu), but a lot of similar-sounding stuff IS on there. I had a listen and there are a few songs that sound like they might be part of this song, but it's hard to tell because they only have 30 second clips at Amazon. Go look him/it up there though.
