I think what's happening in DMC5 is that Dante doesn't have full control over his powers yet. Which is why his hair is a different color. DMC5 may have happened like 5 10 years before the third anyway. He would have a different personality in his early life too.

Exactly. I'm hoping that when DmC flops they'll make a proper sequel. DMC5. Foolish wishing, of course. When DmC flops Capcom will either deem the IP no longer profitable and cancel the series like Breath of Fire(and other games) or they'll go back to the more traditional style. It's sort of a win/win. It was probably Capcom's decision to make the game-to-cutscene more seamless. Having the game render in-engine is a lot less expensive, and since it cuts straight to gameplay afterward it would make sense to see Dante do all of this in his in-game model.
