The One Year War version has greatly improved posability, individual fingers, handplugs to be able to hold weapons better, a full internal skeleton and a Gundam hammer.
The only things the Ver Ka has going for it is the Core Block and Katoki's design of the Gundam (If you prefer that one)

i don't know exactly what you mean by shadowing, what i did see that you may be thinking of is an effect applied to the model commonly referred to a the "max-technique" in the gunpla world. its achieved by laying down a base coat that is a darker shade of what you want your final color to be, then you apply your top coat by starting in the middle of a panel and fading out towards the edges of the panel. to a google on gunpla + max + technique for more info.
in the pre-assembly (done to familiarize yourself to the contruction, before taken apart for painting), in order to paint the head of the Gundam without compromising a smooth finish over the seam where it was joined. Modifying parts on any model (whatever it is) is common, sometimes to get the most realistic or professional finish on your project. If you need more info, lemme know.
I believe he is using a type of acrylic paint, as for the brand, I think he's using GUNZE SANGYO, Tamiya paints are great as well; also acrylic based. I managed to get GUNZE SANGYO paints at Red Frog Hobbies (they are not that far from where I live so shipping was not that bad). I haven't used the new paints, but I was told that Gunze paints are a bit messy; I will shoot you info on this when I use them, only one way to find out for sure. Either way, drop me a line if you need anymore info.
