  • I used to be a pastry chef and we did the flowers on a pic that looks likean over sized push pin and do several petals by piping and turning. then we would just scrape them off with a paring knife and gently put them on top of the leaves

  • I made a batch of Buttercream frosting, but had trouble with the consistency. I live in a humid climate and I've heard that this can contribute to "soft" icing. True?

  • @Passionsbloom I live in Australia, so it's usually pretty warm. Just don't add as much water, milk, corn syrup (whatever you add to your recipe to thin your icing). Also, avoid using all butter if you can, since I find it doesn't hold up. I've replaced half the butter with vegetable shortening or cream cup. It just holds up a lot better.

  • @mabelle502 She had buttercream frosting, but she made two different colors and put them BOTH in the piping bag, so that when the frosting comes out, it is two-toned.

  • to get a two tone icing u put a little bit of one colour on one side of the piping bag (the whole side) the put the second colour in the bag n start piping..u can also use colour past on e side of bag n put in icing

  • Tip 67. Tip 352 (not 100% sure) gives the leaf a perfect point.

  • You put paste food color in the pastry bag. Literally paint it into the bag. The flowers will come out tinted.

  • Sorry Thats wrong. Thats not how you do it. You use two different coloured frostings or buttercream. You take one colour, and place it almost in a strip down one side of your bag, then add the other colour. This way youll get two tone frosting.

  • It's called striping the bag. You can apply the paste food color to the inside of the bag. The other method is to load two colors of icing into the bag at the same time. Been doing both methods for years.

  • Fill the icing bag with two different colors. To get this look, she put the orange frosting on one side of the bag. This way, when she held it upright, the orange color was at the top and the yellow was underneath that.

  • Royal icing, it's a stiffer version of icing that dries firm. If you can't find it in store, it's a very easy recipe to make. :)

  • I always use buttercream. Royal icing dries wayyy too hard and is used mainly on wedding cakes for decor and is not usually eaten as it is too hard. (Think of a brick!)

    How did she do the icing so the red stays atop the yellow petals?

  • you do it when you fill your piping bag up, just put a little red into the bag down one side (the side of the bag where the smallest part of the rose tip is) b4 you put the yellow in. then squeeze out untill you both colours come out.

    I've just tried making buttercream roses and placing them on cupcakes. I left them in the fridge and they set really well. However I've now left them out overnight and the buttercream has gone soft. What do I need to do to ensure the buttercream sets? My recipe is basically butter, shortening, cream, icing sugar and essence.

    Your advice would be appreciated!

  • butter cream will most likely not set but you can try. Ihavn't been able to make it work.

  • the best i can think of and its is sort of silly but use betty crocker vanilla or fluffy white icing. but be careful,if you color it or handle it alot you will need to let it cool before using it.

  • Hey i think i can help buttercream does set in the fridge and is fine for maybe 1-2 hours out of the fridge but after it will soften. nothing wrong with your recipe its the one i use

    I think your buttercream would set if you altered the recipe slightly.

    I just use butter, icing sugar and essence, basically twice as much sugar as butter then essence to taste. For me it sets, as long as it isn't too hot in the kitchen :)

  • one of the best recipes for icing that sets well is the magnolia icing- which i use everytime i pipe cakes and cupcakes. you can get the recipe online- its not buttercream and it can be a bit sweet, but it makes the best flowers very easily

  • You actually need a medium firm icing to make decorations with such as flowers, and such. To do your writing, you need a thinner version of the same icing. Try adding more sugar to the icing, that should do it.

  • There are two ways to get two-tone icing like that. One way is to stripe the bag- you "paint" a stripe of icing color in the bag (in this case the red), then you fill the bag with the other color (yellow). Or, you can actually have two colors of icing in the bag- put one color on one side, the other color on the other side of the bag. Either way, make sure the color you want on the tips of the flowers (red) lines up with the narrow end of the flower tip (104).

  • Great instuctional video. Just wish it was a little more informative and detailed, like how to do the dual coloured roses, and what tips to use.

  • the two tone is created by striping the bag. load one color frosting into the left side of the bag, the second color into the right. lay the frosting bag on it's side.

    choose the color you want on the outer edge of your rose and rotate the bag so it's on top. attach your rose tip, rotating it so the narrow edge is in the center of the desired edge color. the skinny end of the tip will be at 12 o'clock. when you pipe your flower, both colors will come thru the tip, one on top of the other.

  • Hullo! I think you simply fill the pipping bag with two different coloured frosting, one on top of the other, so that when u pipe two colours come out =) hope this helps!

  • You mix your first color into your buttercream base. Then you spread that baseunto a cutting board or other flat surface. You then mix a second color, and mix that just into the edges of the first color. Scrape all the frosting into the bag, scraping from the middle of the mixed frosting out toward the edge. The second color should line up on top or to one side. Turn your bag so that the contrast is on the top of the pipe tip and tighten the tip screw. Voila'!

  • interesting technique. have you ever used a rose nail? i find it a lot easier. you just pipe the rose onto the nail and lift it off with cake scissors or a iny spatula. i love the two toned roses. beautiful job.

  • Interesting. I was taught to pie the roses first, & then tuck the leaves in under. Seeing her wipe her tip after EVERY SINGLE PETAL, I have to agree with my teacher - slide the leaf tip under the rose & pull back out.
