Playing heel up is a choice a lot of metal drummers take simply to emphasize the physical part of metal drumming. Sure heel toe is a less physically straining technique but that is simply not the case, since most metal drummers out there want to show that they're willing to use physical force and power when playing. The same thing is happening with guitarists who are choosing to downpick a fast riff or singers willing to strain their vocal chords a bit more to give the music the extra punch.
