  • I know all about diabetes as I am diabetic myself - Type 1. I eat dark chocolate all the time. My suggestion was to NOT make the biscuits and instead eat dark chocolate, which in fact has much less sugar than eating one biscuit. Moderation is key! This recipe could be made with soy flour and agave syrup (or Splenda, or Stevia) to reduce the sugar count considerably.

  • I am not diabetic. I am sensetive to wheat and dairy.

  • You can still make this by substituting rice flour and dark chocolate chips which should not contain dairy in them. Carob chips is another option. All you need is a little bit of ingenuity and the ability to think creatively. Anything is possible in this day and age.

  • The body breaks down gluten and converts it into a sugar...most foods whether they have "sugar" in them or not are converted into sugar in the body i.e. rice, pasta, potatoes, and WHEAT...they don't have obvious added sugar in them but the body will convert them into a sugar (energy) in the body...the only thing that is not converted into sugar is animal protein...like eggs, meat, cheese, etc.

  • Hi Lucernrox. No, this would definitely not be a good dessert to serve to diabetics.

  • I wouldn't see why not. Just omit the xanthan gum altogether and sub unbleached wheat flour for the gluten-free flour. Let me know how they come out.
