TIP,you leave the 1/4 inch root end on,then you go ahead and do the rest the same way you just did,after you will end up with the root and very little waist,and also skin comes off just as easy with root on.

Yes, well thats all fine and a good tip if you want to spend more time peeling onions. If you really want to reduce eye irritation just put the peeled onions in water as you peel them. If you are a pro cook (production) you will be wasting way to much time if you leave one end of the onion intact.

A very good introduction. One minor point though: Leaving out the horizontal incisions in the the halved onion produces slightly less regular sized pieces because the outer leaves are less curved (producing small pieces) than the inner ones (producing larger pieces).
Try watching Anthony Bourdain Knife skill videos....... not being a hater. Just change your teaching habits so its not trying to show off.
