Great demonstration. Really like that you added scallions (color!) and the toppings you've selected sound great. Next time I'll try w/out matzah meal.
What I do to get the liquid out of the potatoes is the put the shredded potatoe/onion mix into a flourcloth tea towel and wring it gently until liquid is mainly gone.
