The last time he does it, the 2 clubs are no longer there and they become 2 spades and 1 club again. i wonder why. Also everytime he picks up 3 cards he has to put them in a certain order before putting them facedown.

Pay attention to his cards and their suits. The first time he shows the cards nothing changes he still has 2 spades, 1 club as the 3 black cards. But the second time he does it the suits change, 2 clubs and 1 spade.
